Makes 8 servings.

Ingredients

  • 2 1/2 lbs. pork tenderloin
  • 1/2 can (7 oz) chipotle peppers in adobo sauce
  • 1/2 cup sugar-free raspberry preserves
  • 1/4 cup low-calorie BBQ sauce
  • 1/4 cup water

Directions

  1. Blend chipotle peppers, raspberry preserves, and BBQ sauce in a blender or food processor until smooth.
  2. Add the water and pork tenderloin to a slow cooker.
  3. Fully coat the pork with the raspberry chipotle mixture.
  4. Cook on high for 3.5–4 hours or on low for 7–8 hours.
  5. When the pork is cooked, slice the tenderloin or shred with forks.
