It can feel tricky to stay on track when you’re surrounded by sugar-packed treats, but we’ve got a recipe that lets you satisfy your sweet tooth without getting off track with your nutrition. Our homemade protein bites are a healthier alternative to traditional candy bars, offering all the flavor with none of the sugar overload. Plus, each serving packs a punch with 10g of protein, making these bites not only delicious but also a perfect way to stay fueled.
What makes these protein bites stand out is the use of healthy fats like coconut oil and peanut butter. Unlike the processed fats in most candy bars, coconut oil provides medium-chain triglycerides (MCTs), which are easier for the body to convert into energy. This means you’re nourishing your body with fats that support energy levels instead of weighing you down. Combine that with the plant-based proteins and fiber-rich ingredients like almond and oat flour, and you’ve got a snack that keeps you satisfied long after the Halloween candy bowl is empty!
Snickers Protein Bites
Makes 12 servings
Ingredients: Protein Bites
- 1⁄2 cup unsweetened peanut butter
- 1⁄4 cup maple syrup
- 1 tsp vanilla extract
- 1/3 cup coconut oil (melted)
- 1 cup oat flour
- 1 cup almond flour or almond meal
- 2 scoops vanilla protein powder
- pinch of salt (omit if your peanut butter contains salt)
- 1⁄2 cup crushed peanuts
Ingredients: Chocolate Ganache
- 1/3 cup chocolate chips
- 2 tsp coconut oil
- Pinch of salt
Directions
- In a large mixing bowl, stir together the peanut butter, maple syrup, vanilla extract, coconut oil, oat flour, almond flour, protein powder, salt and most of the crushed peanuts (reserve some for topping).
- Press the mixture evenly into an 9×4 loaf pan lined with parchment paper. Chill in the fridge or freezer until solid, then slice into small squares.
- In a microwaveable bowl, heat the chocolate chips and coconut oil in 30-second increments until melted. Whisk together until smooth and add a pinch of salt. Drizzle the chocolate over the bars and top with the remaining peanuts. Chill to allow the chocolate to set.
- Store in the fridge in an airtight container.
Notes: Use a blender or food processor to make oat flour out of oats.
If you prefer to skip the second chilling step, you can drizzle the chocolate and sprinkle the crushed peanuts right into the loaf pan after adding the bar mixture.
