Recipe: Harvest Chopped Salad with Poppyseed Vinaigrette  

This stunning harvest salad with tangy poppyseed dressing is hearty, simple, and packed full of nutritious ingredients.

Fill up with this creative recipe, packed with seasonal produce like squash, apples, pears, cranberries, and plenty of crunch, while adding some vibrant colors to your plate. Plus, it’s easy to customize by adding your own favorite ingredients.  

Harvest Chopped Salad with Poppyseed Dressing

Serves 4

Ingredients

  • 2 hearts of romaine lettuce, chopped 
  • 1/2 cup dried cranberries 
  • 1/4 cup walnuts, roughly chopped 
  • 2 medium ripe pears or apples, chopped 
  • 2 oz. Feta cheese, crumbled 
  • 1/3 cup poppyseed dressing 
  • 1/4 cup light balsamic vinaigrette 

Directions

  1. In a large bowl, combine lettuce, cranberries, walnuts, chopped pears or apples, and feta cheese. 
  2. In a small bowl, whisk together the poppyseed dressing and the vinagrette. Drizzle over salad. Toss to coat.
