Ah, lunch… we meet again.
Just because lunchtime happens every day doesn’t mean it can’t be exciting. In fact, what better time is there to brighten up your POV than your mid-day break?
If you’re anything like us, buffalo chicken is one of your all-time favorite flavors. That tangy deliciousness is brought into this dish by way of the dressing, made macro-friendly by using Greek yogurt and buffalo sauce as the base and adding an optional dash of celery salt.
This Creamy Buffalo Chicken Salad Bowl recipe is packed with protein, vitamins and minerals thanks to the chicken and ample servings of vegetables. In a rush? Here’s a time-saving tip: use pre-cooked chicken and prep this lunch in a flash—so you can get going on your day’s to-do list.
An added bonus — you can repurpose the cooked chicken once you’ve tossed it in the buffalo dressing by adding it to wraps, rice bowls, pizza and more.
