Recipe: Chocolate Chip Cookie Dough Truffles

One of the best ways to stay on track with your nutrition goals is to have high-protein snacks at-the-ready so you are prepared when it’s time to fuel up.

Research shows that when it comes to controlling your appetite, eating high-protein snacks is a more effective strategy than eating low-protein snacks. Consuming high-protein food during your afternoon snack can lead to reduced caloric intake during dinner and an overall increase in satiety or “feeling full.”

We love these no-bake, high-protein Chocolate Chip Cookie Dough Truffles as an afternoon snack to help you make it from lunch to dinner without those hunger pangs. Not only will you be getting in more grams of protein, inching you closer to hitting your protein target for the day, you’ll be in a better position to choose a nutritious dinner option.

These chocolate chip cookie dough truffles incorporate chickpeas, which have a low glycemic index. This means that the body digests and absorbs the nutrition from the chickpeas slowly. A health benefit of low glycemic index foods such as chickpeas is that they do not cause sharp increases in blood sugar and help maintain balanced insulin levels.

Chickpeas are also rich in soluble fiber. Like other foods that contain soluble fiber, chickpeas are great for digestive health. The benefits don’t stop there – foods with soluble fiber can also help lower your risk of heart disease by lowering total cholesterol. 

Chocolate Chip Cookie Dough Truffles

Makes 12 servings

Ingredients (Truffle dough)

  • 1/2 cup chickpeas
  • 1 1/2 scoops vanilla protein powder
  • 2 tbsp powdered peanut butter
  • 2 tbsp maple syrup
  • 2 tbsp coconut flour
  • 1 tbsp vanilla extract
  • 2 tbsp chocolate chips

Ingredients (Chocolate coating)

  • 2 tbsp chocolate chips
  • 1 tbsp milk

Directions

  1. Begin by rinsing the chickpeas under cold water, then microwave them for 1 minute.
  2. After microwaving, rinse the chickpeas for an additional 1 minute to reduce their flavor, and then transfer them to a food processor.
  3. In the food processor, combine all dough ingredients except for the chocolate chips and blend until smooth.
  4. Remove the blade from the food processor, and gently hand-stir in the chocolate chips.
  5. Chill the dough in the refrigerator for at least an hour, or in the freezer for 20-30 minutes until firm. Once chilled, shape the dough into balls.
  6. In a microwave-safe bowl, melt 2 tablespoons of chocolate chips with 1 tablespoon of milk.
  7. Dip the cookie dough balls into the melted chocolate or drizzle it over the top.
  8. Place the coated cookie dough balls in the freezer until ready to serve.
