While traditional banana bread recipes rely on flour, butter and sugar, this macro-friendly version uses Kodiak Buttermilk Power Cakes Flapjack and Waffle Mix as a base. This contains 100% whole grain wheat flour and includes whey protein concentrate.
The extra scoop of protein powder allows you to bring in your favorite protein supplement (we recommend vanilla flavor, but a chocolate banana bread in a mug also sounds yummy, now that we think about it!) After microwaving, top with sliced bananas, walnuts (if desired) and maple syrup.
Protein-Packed Banana Bread in a Mug
Makes 1 serving
Ingredients
- 1 medium banana
- 1/4 cup Kodiak Buttermilk Power Cakes
- 1 scoop vanilla protein powder
- 1 tbsp walnuts, crushed
- 2 tbsp maple syrup
Directions
- Spray a microwave-safe mug or ramekin with cooking spray and set aside.
- In a separate bowl, mash the banana before adding the remaining ingredients. Stir well until you have a smooth batter.
- Pour the batter into the mug and microwave for 75-90 seconds, or until the center is no longer runny. Watch for overflow, and you may have to finish the cooking time in 5-second intervals.
- Optional: top with additional banana slices, walnuts and syrup.
